Classic Einkorn Pizza Dough

Ingredients:

  • 1 cup warm water
  • 1 tbsp yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 2 tbsp oil
  • 3 cups Einkorn flour
  • Garlic powder and oregano to taste (optional)

 

Instructions:

  1. Dissolve yeast and sugar in warm water.
  2. Stir in remaining ingredients and knead until smooth and elastic don’t overwork.
  3. Let dough rest 5-10 minutes before patting into a pan.
  4. Add pizza sauce and your favorite toppings.
  5. Bake at 425°F for 20 minutes.

Tip: For a crispier crust, try letting the dough rise slightly longer before baking.

Soft and Fluffy Hamburger or Bread Buns

Ingredients:

  • 1 ½ cups water
  • 2 cups whole milk
  • ½ cup honey
  • 1 cup butter
  • 1 ½ tbsp salt
  • 2 tbsp lecithin powder or granules
  • 2 eggs, beaten
  • 3 tbsp yeast
  • 10–12 cups Einkorn flour

 

Instructions:

  1. Heat water, milk, honey, butter, and salt until scalding. Cool to 110–115°F.
  2. Add lecithin, eggs, yeast, and flour. Knead into a soft dough.
  3. Let rise 20–30 minutes, then roll out ¼–½ inch thick. Cut with a jar ring or biscuit cutter.
  4. Place on a cookie sheet, let rise another 20–30 minutes.
  5. Bake at 350°F for 15–20 minutes. Makes 3–4 dozen buns.

Moist and Decadent Chocolate Cake

Ingredients:

  • 3 ½ cups Einkorn flour
  • 1 ¼ cup sugar
  • ½ cup cocoa
  • 2 tsp baking soda
  • 1 tsp salt
  • 2 tbsp vinegar
  • 2 tsp vanilla
  • ¾ cup oil
  • 2 cups water

 

Instructions:

  1. Whisk dry ingredients together. Add liquids and whisk again.
  2. Pour into a 9”x13” cake pan or two 9” round cake pans.
  3. Bake at 350°F for 30–35 minutes or until a toothpick comes out clean.
  4. Frost with your favorite frosting.

Tip: This recipe can also make delicious cupcakes, fill muffin pans ¾ full and bake for about 15 minutes, testing for doneness.

Tips for Baking with Einkorn Flour

  • When substituting Einkorn flour for regular wheat flour, you may need to add ¼–½ extra cup of flour, judging by dough consistency.
  • For yeast or cake recipes, reducing liquids by about 1/3 can help achieve perfect texture.
  • Avoid overbaking whole grain products to prevent dryness.
  • Yeast breads not eaten within two days maintain freshness best if frozen after cooling.
